The current utilization status of garlic in China

The garlic production in our country is very high, with a perennial planting area of 2.00-2.67 million hectares and a yield of 4 million tons, ranking first in the world and accounting for about 1/4 of the world's total production. Garlic is most commonly consumed raw, with the highest nutritional value and significant physiological effects. However, after the dormancy period of 60-80 days, when the natural environment is suitable, garlic will quickly sprout and consume the stored nutrients, leading to a sharp deterioration in quality and inability to be consumed. Therefore, garlic can be processed into various products. There are many products that can be developed in this area, such as dehydrated garlic slices, garlic granules, and garlic powder, which are basically all exported to various parts of the world; Further processing into a series of products, such as health food, cosmetics, feed additives, etc., can reach dozens of products. Garlic, which is regarded as a precious product by many countries around the world, has not been truly developed into an industry in China.
