To prevent garlic from freezing to death in severe winter, garlic production should choose varieties with large heads, few petals, weak bolting ability, long dormancy period, and garlic weight of 50g or more. For garlic bolt production, varieties with early and thick bolting should be selected, and the sowing period should be from late September to early October each year.
